Breakfast for dinner: Are you a fan?
bsolutely! I love breakfasts!
I often make quiche or breakfast casseroles, especially during the warmer months, because we get such an abundance of fresh eggs from our chickens and we can add fresh veggies in from our garden. We also like making scrambled eggs and serving them in warmed, soft tortilla shells. The kids usually add ranch dressing to it while I go more of the Mexican way, adding in salsa and sour cream. With scrambled eggs, it’s so easy to add in veggies while cooking it (and other left overs).
And then there are times, I do something awful . . . yes, I sometimes serve the kids those frozen toaster waffles for a quick dinner when we are on the run. The one way I can bribe them to eat them is letting them put “my” Nutella on it! 🙂
